Cowboy Soup (Hearty One-Pot Comfort Meal)

Cowboy Soup is a hearty, comforting one-pot meal that comes together in just 30 minutes. Loaded with ground beef, potatoes, vegetables, and beans, this filling soup is perfect for feeding a hungry crowd. It’s bold, flavorful, and easy to customize, making it a go-to weeknight dinner or cozy weekend meal.

  • 2 tablespoons olive oil

  • 1 medium yellow onion, diced

  • 3 stalks celery, diced

  • 4 cloves garlic, minced

  • 2 lbs ground beef

  • 1 lb Yukon Gold potatoes, cut into 1-inch pieces (about 4 medium potatoes)

  • 4 carrots, peeled and sliced into rounds

  • 1 (14.5 oz) can green beans, drained

  • 3 tablespoons tomato paste

  • 1 (14.5 oz) can diced tomatoes, with juices

  • 1 (15 oz) can black-eyed peas, drained and rinsed

  • 1 (15 oz) can corn, drained

  • 46 cups beef broth (use more for a thinner soup)

  • 2 teaspoons Italian seasoning

  • 1 teaspoon smoked paprika

  • 2 teaspoons chili powder

  • Salt, black pepper, and red pepper flakes, to taste

Optional Toppings: shredded cheese, sour cream, chopped green onions, fresh parsley, or crushed tortilla chips

Instructions

  • Heat the olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat.

  • Add the onion and celery and cook for 2–3 minutes, until softened. Add the garlic and cook for 1 minute, until fragrant.

  • Add the ground beef and cook, breaking it apart, until fully browned and no pink remains.

  • Stir in the potatoes, carrots, green beans, tomato paste, diced tomatoes, black-eyed peas, corn, seasonings, and 4 cups of beef broth. Mix well.

  • Increase the heat to high and bring the soup to a boil.

  • Reduce heat to medium-low, cover, and simmer for 14–16 minutes, or until the potatoes are fork-tender.

  • Add additional broth as needed to reach your desired consistency. Taste and adjust seasoning with salt, pepper, or red pepper flakes.

  • Serve hot with your favorite toppings.

Notes

  • Yukon Gold potatoes hold their shape well, but russet potatoes also work.

  • Ground turkey or sausage can be substituted for ground beef.

  • For extra spice, add more chili powder or a pinch of cayenne.

  • This soup thickens as it sits—add broth when reheating if needed.

  • Store leftovers in an airtight container in the refrigerator for up to 4 days.
