These copycat Cajun fries are inspired by the bold, spicy flavor of Five Guys fries, but made lighter at home. They’re perfectly crispy on the outside, fluffy on the inside, and coated in a smoky, spicy Cajun seasoning blend. You can make them in the oven or air fryer—both methods deliver delicious results.
2 large russet potatoes (or 3 medium)
1 tablespoon peanut oil, canola oil, or olive oil
Cooking spray
1 teaspoon smoked paprika
½ teaspoon garlic powder
½ teaspoon onion powder
½ teaspoon granulated sugar
½ teaspoon dried oregano
¼ teaspoon dried thyme
¼ teaspoon red chili flakes
½ teaspoon salt
¼ teaspoon freshly cracked black pepper (to taste)
Wash, peel, and cut the potatoes into ½-inch thick fries.
(Optional but recommended) Place the fries in a bowl of ice water and soak for at least 30 minutes to remove excess starch.
Drain, rinse, and pat the fries completely dry with paper towels.
Transfer fries to a large bowl, toss with oil, then add all the spices. Mix until evenly coated.
Preheat oven to 390°F (200°C) with a baking sheet inside.
Remove the hot baking sheet, spray with cooking spray, and arrange fries in a single layer.
Bake for 35–40 minutes, flipping halfway through, until golden and crispy.

Air fry for 20–25 minutes, shaking or flipping halfway through, until crispy and golden.
Sprinkle lightly with sea salt if desired.
