  • ½ cup red onion, thinly sliced

  • ½ cup fresh parsley, chopped

  • ¼ cup fresh mint, chopped

  • 3 tablespoons olive oil

  • 2 tablespoons freshly squeezed lemon juice

  • 1 clove garlic, minced

  • ½ teaspoon dried oregano

  • Salt and black pepper, to taste

Instructions

  • In a large bowl, combine the chickpeas, diced avocado, crumbled feta, red onion, parsley, and mint.

  • In a small bowl or jar, whisk together the olive oil, lemon juice, garlic, and dried oregano. Season with salt and pepper to taste.

  • Pour the dressing over the salad and gently toss until everything is evenly coated.

  • Serve immediately or refrigerate until ready to enjoy.
