This Chicken Sausage and Broccoli Orzo is a quick, cozy, and satisfying one-pot meal. Tender orzo, flavorful chicken sausage, and bright broccoli come together in a creamy, cheesy finish. It’s perfect for busy weeknights, and the whole dish is ready in just 30 minutes!
2 cups orzo pasta
1 tbsp olive oil
1 lb chicken sausage, sliced
2 cups broccoli florets
3 cloves garlic, minced
4 cups chicken broth
1 tsp Italian seasoning
Salt and pepper, to taste
½ cup grated Parmesan cheese
2 tbsp fresh parsley, chopped (for garnish)
Cook the Sausage
Heat olive oil in a large pot over medium heat.
Add sliced chicken sausage and cook for 5–7 minutes, until browned.
Add Garlic
Stir in the minced garlic and cook for 1 minute, until fragrant.
Add Broccoli
Add broccoli florets and cook for 2–3 minutes, just until they begin to soften.
Add Orzo & Broth
Stir in the orzo, chicken broth, Italian seasoning, salt, and pepper.
Bring to a boil, then reduce heat and let it simmer.
Simmer
Cover and cook for 10–12 minutes, stirring occasionally, until the orzo is tender and most of the liquid is absorbed.
Finish with Cheese
Remove from heat and stir in Parmesan until it melts into the orzo and becomes creamy.
Serve
Spoon into bowls and top with fresh parsley. Serve warm!
Use good-quality broth — it adds lots of flavor to the orzo.
For extra creaminess, add a splash of cream or an extra handful of Parmesan.
Swap broccoli for spinach, peas, or asparagus if you want variety.
Use whole-wheat orzo for extra fiber.
