Ingredients

Scale
  • 2 cups orzo pasta

  • 1 tbsp olive oil

  • 1 lb chicken sausage, sliced

  • 2 cups broccoli florets

  • 3 cloves garlic, minced

  • 4 cups chicken broth

  • 1 tsp Italian seasoning

  • Salt and pepper, to taste

  • ½ cup grated Parmesan cheese

  • 2 tbsp fresh parsley, chopped (for garnish)

Instructions

  • Cook the Sausage
Heat olive oil in a large pot over medium heat.
Add sliced chicken sausage and cook for 5–7 minutes, until browned.

  • Add Garlic
Stir in the minced garlic and cook for 1 minute, until fragrant.

  • Add Broccoli
Add broccoli florets and cook for 2–3 minutes, just until they begin to soften.

  • Add Orzo & Broth
Stir in the orzo, chicken broth, Italian seasoning, salt, and pepper.
Bring to a boil, then reduce heat and let it simmer.

  • Simmer
Cover and cook for 10–12 minutes, stirring occasionally, until the orzo is tender and most of the liquid is absorbed.

  • Finish with Cheese
Remove from heat and stir in Parmesan until it melts into the orzo and becomes creamy.

  • Serve
Spoon into bowls and top with fresh parsley. Serve warm!

Notes

  • Use good-quality broth — it adds lots of flavor to the orzo.

  • For extra creaminess, add a splash of cream or an extra handful of Parmesan.

  • Swap broccoli for spinach, peas, or asparagus if you want variety.

  • Use whole-wheat orzo for extra fiber.
