2 packages ramen noodles (6 oz each), seasoning packets discarded
1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
2 tbsp vegetable oil, divided
1 red bell pepper, sliced
1 cup snap peas
1 carrot, julienned
3 cloves garlic, minced
1 tbsp fresh ginger, minced
3 green onions, sliced (white and green parts separated)
¼ cup soy sauce
2 tbsp oyster sauce
1 tbsp sesame oil
1 tsp sugar
¼ tsp white pepper
Boil the Noodles
Bring a pot of water to a boil for the ramen noodles.
Make the Sauce
In a small bowl, mix together the soy sauce, oyster sauce, sesame oil, sugar, and white pepper. Set aside.
Cook the Chicken
Heat 1 tablespoon of vegetable oil in a large wok or skillet over high heat. Add the chicken and stir-fry for 5–6 minutes until golden brown and cooked through. Remove and set aside.
Stir-Fry the Vegetables
Add the remaining oil to the pan. Stir-fry the bell pepper, snap peas, and carrot for 2–3 minutes until crisp-tender.
Add Aromatics
Add the garlic, ginger, and the white parts of the green onions. Stir-fry for about 30 seconds until fragrant.
Cook the Ramen
Cook the ramen noodles in boiling water for about 2 minutes, just until slightly undercooked. Drain well.
Combine Everything
Return the chicken to the pan. Add the noodles and pour in the sauce. Toss and stir-fry for 2–3 minutes until everything is evenly coated and heated through.
Serve
Garnish with the green parts of the green onions and serve hot.
Undercook the ramen slightly so it doesn’t get mushy when stir-fried.
Use high heat for authentic stir-fry flavor and quick cooking.
Swap veggies with broccoli, cabbage, or mushrooms if desired.
Add heat with chili flakes or sriracha for a spicy kick.
