Chicken Ramen Stir Fry

This Chicken Ramen Stir Fry is a quick, flavorful fusion dish that combines the comfort of ramen noodles with the bold, savory flavors of a classic stir fry. Loaded with tender chicken, crisp vegetables, and a simple umami-packed sauce, it’s ready in just 30 minutes—perfect for busy weeknights or when you’re craving an easy Asian-inspired meal.

  • 2 packages ramen noodles (6 oz each), seasoning packets discarded

  • 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces

  • 2 tbsp vegetable oil, divided

  • 1 red bell pepper, sliced

  • 1 cup snap peas

  • 1 carrot, julienned

  • 3 cloves garlic, minced

  • 1 tbsp fresh ginger, minced

  • 3 green onions, sliced (white and green parts separated)

Sauce

  • ¼ cup soy sauce

  • 2 tbsp oyster sauce

  • 1 tbsp sesame oil

  • 1 tsp sugar

  • ¼ tsp white pepper

Instructions

  • Boil the Noodles
    Bring a pot of water to a boil for the ramen noodles.

  • Make the Sauce
    In a small bowl, mix together the soy sauce, oyster sauce, sesame oil, sugar, and white pepper. Set aside.

  • Cook the Chicken
    Heat 1 tablespoon of vegetable oil in a large wok or skillet over high heat. Add the chicken and stir-fry for 5–6 minutes until golden brown and cooked through. Remove and set aside.

  • Stir-Fry the Vegetables
    Add the remaining oil to the pan. Stir-fry the bell pepper, snap peas, and carrot for 2–3 minutes until crisp-tender.

  • Add Aromatics
    Add the garlic, ginger, and the white parts of the green onions. Stir-fry for about 30 seconds until fragrant.

  • Cook the Ramen
    Cook the ramen noodles in boiling water for about 2 minutes, just until slightly undercooked. Drain well.

  • Combine Everything
    Return the chicken to the pan. Add the noodles and pour in the sauce. Toss and stir-fry for 2–3 minutes until everything is evenly coated and heated through.

  • Serve
    Garnish with the green parts of the green onions and serve hot.

Notes

  • Undercook the ramen slightly so it doesn’t get mushy when stir-fried.

  • Use high heat for authentic stir-fry flavor and quick cooking.

  • Swap veggies with broccoli, cabbage, or mushrooms if desired.

  • Add heat with chili flakes or sriracha for a spicy kick.
