2 boneless, skinless chicken breasts
Salt and pepper, to taste
1 tablespoon olive oil
1 avocado, sliced
4 slices cheese (Swiss, cheddar, or provolone)
4 slices bread (sourdough, ciabatta, or your choice)
2 tablespoons mayonnaise
1 tablespoon Dijon mustard
1 small red onion, thinly sliced
1 tomato, sliced
Butter or olive oil, for grilling
Season chicken breasts with salt and pepper.
Heat olive oil in a skillet over medium-high heat.
Cook chicken 6–7 minutes per side, until fully cooked through.
Let rest for several minutes, then slice thinly.
Slice avocado, tomato, and red onion.
Prepare cheese slices and set aside.
Spread mayonnaise and Dijon mustard evenly on each slice of bread.
Layer on two slices of bread:
Sliced chicken
Avocado
Cheese
Onion
Tomato
Top with remaining bread slices (condiment side down).
Heat a skillet or grill pan over medium heat.
Add a small amount of butter or olive oil.
Grill each sandwich 3–4 minutes per side, pressing gently with a spatula, until golden and the cheese is melted.
Let the sandwiches rest for 1 minute, slice in half, and serve warm.
Pound the chicken: Lightly pounding the chicken breasts makes them cook faster and more evenly.
Use good bread: Sourdough or ciabatta holds up best and gives a delicious crisp.
Meltier cheese, better melt: Provolone or Swiss melts beautifully for that perfect gooey texture.
Keep the avocado fresh: Slice the avocado just before assembling to prevent browning.
Add spice: Sprinkle crushed red pepper or add jalapeños for a spicy version.
