Blueberry Lemon Thyme Jam

  • 1 pint fresh blueberries

  • ¼ cup sugar

  • Juice of 1 lemon

  • 1 small bundle lemon thyme (tied with kitchen twine)

Sandwiches

  • 8 slices sourdough bread (¼-inch thick)

  • 4 oz mozzarella cheese, shredded

  • 4 oz white cheddar cheese, grated

  • 4 Tbsp butter (unsalted recommended)

  • Flaky sea salt, for finishing

  • Extra fresh lemon thyme leaves (optional)

Instructions

⭐ Step 1: Make the Blueberry Spread

  1. Combine blueberries, sugar, lemon juice, and bundled thyme in a 2-quart saucepan over medium-high heat.

  2. Bring to a boil, then reduce to medium-low and simmer for 10 minutes.

  3. Lower heat to low and cook another 10 minutes, stirring often, until thickened.

  4. Remove the thyme bundle and let the jam cool for 10 minutes.

Tip: You can make this up to 3 days ahead — store in the fridge.


⭐ Step 2: Assemble the Sandwiches

  1. Lay 4 slices of sourdough on a clean surface.

  2. Spread a generous layer of blueberry jam on each.

  3. Sprinkle both cheeses evenly over the jam.

  4. Top with remaining bread slices.


⭐ Step 3: Grill the Sandwiches

  1. Heat a cast-iron skillet over medium heat.

  2. Add 2 Tbsp butter and place two sandwiches in the skillet.

  3. Cover and cook 2–3 minutes per side, until golden and the cheese melts.

  4. Repeat with remaining sandwiches and butter.

  • Cut sandwiches in half.

  • Sprinkle lightly with flaky sea salt and fresh thyme leaves.
