Air Fryer Scotch Eggs are a crispy, protein-packed snack or breakfast option that’s surprisingly easy to make at home. With a flavorful sausage layer wrapped around a tender boiled egg and coated in golden breadcrumbs, these Scotch eggs cook beautifully in the air fryer—no deep frying required. They’re perfect for brunch, meal prep, or even a grab-and-go breakfast.
6 large hard-boiled eggs, peeled
1 pound ground pork sausage
2 large eggs, whisked
1 cup breadcrumbs (or panko)
Prepare the Eggs:
Start with hard-boiled eggs. Once cooked, peel and set them aside to cool completely.
Wrap with Sausage:
Divide the raw sausage into six equal portions. Flatten each portion into a patty. Place one boiled egg in the center and gently wrap the sausage around it, sealing completely. Repeat with remaining eggs.
Coat the Eggs:
Place whisked eggs in one shallow bowl and breadcrumbs in another. Dip each sausage-wrapped egg into the egg mixture, then roll in breadcrumbs until fully coated.
Air Fry:
Lightly spray the air fryer basket with nonstick cooking spray or line it with parchment paper. Place the Scotch eggs in a single layer without overcrowding.
Cook at 400°F (200°C) for 15–18 minutes, until the sausage is fully cooked and the coating is golden brown and crispy.
Serve:
Let cool slightly before slicing. Serve warm as a snack, breakfast, or brunch item.
Make sure the boiled eggs are completely dry before wrapping to help the sausage stick better.
Seal the sausage layer well to prevent cracking during cooking.
Don’t overcrowd the air fryer—cook in batches if needed.
