Air Fryer Lava Cake is a rich and indulgent dessert with a warm, molten chocolate center. The outside is light and slightly crisp, while the inside stays soft and gooey. It’s the perfect quick dessert when you want something chocolatey without turning on the oven.

  • 3 oz chocolate, chopped

  • 4 tablespoons unsalted butter

  • 2 large eggs

  • 1 large egg white

  • ⅓ cup granulated sugar

  • ¼ cup all-purpose flour

  • 1 teaspoon confectioners’ sugar (for topping)

Instructions

  • Prepare the ramekins
    Spray two 6-ounce ramekins with nonstick cooking spray and set aside.

  • Melt chocolate and butter
    Add the chocolate and butter to a microwave-safe bowl.
    Microwave for 60–90 seconds, stirring every 30 seconds, until fully melted and smooth.

  • Whisk eggs and sugar
    In a separate bowl, whisk the eggs, egg white, and sugar until frothy.

  • Combine batter
    Slowly pour the egg mixture into the melted chocolate mixture and stir gently until combined.

  • Add flour
    Fold in the flour using a spatula, mixing just until combined. Do not overmix.

  • Fill ramekins
    Divide the batter evenly between the prepared ramekins.

  • Air fry
    Air fry at 370°F (188°C) for 8–10 minutes, until the tops have risen and the edges look set but the centers remain soft.

  • Serve
    Let cool for 1 minute. Carefully loosen the edges with a knife, invert onto plates, and dust with confectioners’ sugar before serving.

Notes

  • Do not use an electric mixer—hand mixing keeps the batter airy and ensures a molten center.

  • Watch closely near the end of cooking; overcooking will remove the lava effect.

  • Silicone baking cups work well if you don’t have oven-safe ramekins.

  • Serve immediately for the best molten center.
