This Air Fryer Lasagna Fritta is a delicious copycat of the popular Olive Garden appetizer. It features tender lasagna noodles rolled with a rich, creamy five-cheese filling, then breaded and air-fried until golden and crispy. The air fryer gives you all the crunch of traditional frying with less oil and less mess—perfect for parties, holidays, or an indulgent Italian-inspired snack.

Lasagna Filling

  • 10 oz lasagna noodles (about 10 noodles)

  • 15 oz whole milk ricotta cheese

  • ½ cup freshly grated parmesan cheese

  • ½ cup freshly grated Romano cheese

  • ½ cup freshly grated Asiago cheese

  • ½ cup freshly grated mozzarella cheese

  • 2 tablespoons Italian seasoning

  • 2 large eggs

Breading

  • 1½ cups Italian breadcrumbs or panko

  • 2 tablespoons olive oil

  • ½ cup finely grated parmesan cheese

  • 2 large eggs

For Cooking & Serving

  • Olive oil spray (air fryer method)

  • Marinara sauce

  • Alfredo sauce (optional)

Instructions

Noodle Preparation

  1. Cook lasagna noodles according to package instructions until al dente.

  2. Drain and rinse with cold water to cool. Trim ribbon edges if needed.

  3. In a medium bowl, mix ricotta, all cheeses, Italian seasoning, and eggs until smooth.

  4. Lay noodles flat and spread the cheese mixture evenly over each noodle.

  5. Roll each noodle tightly into a 2–3 inch roll.

  6. Place rolls on a parchment-lined tray and freeze for 1–2 hours to firm up.


Breading

  1. Beat eggs in a shallow bowl.

  2. In a microwave-safe dish, combine breadcrumbs and olive oil. Microwave for 1–2 minutes, stirring every 30 seconds, until lightly golden.

  3. Let cool, then mix in parmesan cheese.

  4. Dip each frozen lasagna roll into egg, then coat in breadcrumbs, shaking off excess.


Air Fryer Method

  1. Preheat air fryer to 400°F (200°C).

  2. Spray basket lightly with oil.

  3. Place lasagna fritta in a single layer and spray tops lightly.

  4. Cook for 8 minutes, flip, then cook another 6–8 minutes until crispy and golden.

  5. Serve immediately with marinara and/or Alfredo sauce.


Pan-Fried Method (Optional)

  1. Heat canola oil in a pan over medium-high heat.

  2. Fry lasagna fritta for 2 minutes per side until golden brown.

  3. Drain on paper towels and serve with dipping sauces.

Notes

  • Freezing is key—it keeps the rolls from falling apart while cooking.

  • Use freshly grated cheese for the best flavor and texture.

  • Don’t overcrowd the air fryer basket; cook in batches if needed.

  • Lightly spray with oil during cooking if they look dry.
