  • 2 boneless, skinless chicken breasts (56 oz each), or 4 thin-sliced chicken breasts

  • 2 cups seasoned parmesan breadcrumbs

  • 2 large eggs

  • ½ teaspoon kosher salt

  • ¼ teaspoon ground black pepper

  • Olive oil spray (non-aerosol, for crispiness)

  • Shredded parmesan cheese

  • Fresh lemon wedges

  • Chopped parsley

  • Red pepper flakes

Instructions

  • Prepare the Chicken

    • Slice each chicken breast in half lengthwise to create thinner pieces.

    • Pat the chicken dry with a clean towel.

    • Pound lightly with a meat mallet if needed so all pieces are even in thickness.

  • Bread the Chicken

    • Place breadcrumbs in one shallow bowl.

    • In another bowl, whisk eggs with salt and black pepper.

    • Dip each piece of chicken into the egg mixture, then press firmly into the breadcrumbs until fully coated.

  • Air Fry

    • Preheat the air fryer to 390°F (200°C).

    • Lightly spray the air fryer basket with olive oil spray.

    • Arrange the chicken in a single layer (cook in batches if needed).

    • Spray the tops lightly with olive oil spray.

    • Cook for 6–7 minutes, flip carefully, spray again, and cook for 4–5 more minutes, until the internal temperature reaches 165°F (74°C).

  • Serve

    • Let the chicken rest for 5 minutes before slicing.

    • Finish with a squeeze of lemon, extra salt and pepper, and optional toppings.
