1 lb boneless, skinless chicken thighs
1 tablespoon olive oil
2 teaspoons dried oregano
1 teaspoon garlic powder
Salt and pepper, to taste
4 pita breads
1 cup cherry tomatoes, halved
1 cucumber, diced
1 red onion, thinly sliced
For the creamy feta tzatziki:
1 cup plain Greek yogurt
½ cup feta cheese, crumbled
1 tablespoon lemon juice
1 clove garlic, minced
Salt and pepper, to taste
Fresh parsley, for garnish
Marinate the chicken: In a bowl, combine olive oil, oregano, garlic powder, salt, and pepper. Add chicken thighs and coat evenly. Marinate for at least 30 minutes.
