  • 1 lb boneless, skinless chicken thighs

  • 1 tablespoon olive oil

  • 2 teaspoons dried oregano

  • 1 teaspoon garlic powder

  • Salt and pepper, to taste

  • 4 pita breads

  • 1 cup cherry tomatoes, halved

  • 1 cucumber, diced

  • 1 red onion, thinly sliced

For the creamy feta tzatziki:

  • 1 cup plain Greek yogurt

  • ½ cup feta cheese, crumbled

  • 1 tablespoon lemon juice

  • 1 clove garlic, minced

  • Salt and pepper, to taste

  • Fresh parsley, for garnish

Instructions

  1. Marinate the chicken: In a bowl, combine olive oil, oregano, garlic powder, salt, and pepper. Add chicken thighs and coat evenly. Marinate for at least 30 minutes.

  2. Cook the chicken: Heat a skillet over medium-high heat. Cook chicken 5–7 minutes per side until golden brown and cooked through (internal temperature 165°F / 75°C).

  3. Prepare the tzatziki sauce: In a separate bowl, mix Greek yogurt, feta, lemon juice, garlic, salt, and pepper until smooth.

  4. Slice and assemble: Slice cooked chicken into strips. Spread tzatziki on pita bread, add chicken, and top with cherry tomatoes, cucumber, and red onion. Roll the pita and serve.

  • Meal prep: Marinate chicken ahead of time for more flavor. You can also prepare the tzatziki a day in advance.

  • Healthier options: Use whole grain pita and add extra fresh vegetables for added fiber and nutrients.
