1 pound lean ground beef
1 cup chunky salsa
1 (10-ounce) can red enchilada sauce
8 (8-inch) tortillas (flour or corn)
1 (8-ounce) package shredded Mexican blend cheese (about 2 cups)
Preheat the oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish with nonstick spray.
In a large skillet over medium-high heat, brown the ground beef until fully cooked. Drain excess fat.
Reduce heat to medium-low, stir in the salsa, and cook until heated through. Remove from heat.
Pour about ½ of the enchilada sauce into the bottom of the prepared baking dish.
Warm the tortillas according to package directions to make them easier to roll.
Spoon about ¼ cup of the beef mixture down the center of each tortilla and top with 1 heaping tablespoon of cheese.
Roll tortillas tightly and place seam-side down in the baking dish.
Pour the remaining enchilada sauce over the enchiladas and sprinkle with the remaining cheese.
Cover tightly with aluminum foil and bake for 30–35 minutes, until hot and bubbly.
Remove foil, serve warm, and enjoy.
Flour vs. corn tortillas: Flour tortillas roll easily, while corn gives a more traditional flavor.
Extra flavor: Add a pinch of cumin or chili powder to the beef if desired.
Make it spicy: Use hot salsa or spicy enchilada sauce.
Serving ideas: Pair with rice, refried beans, or a simple green salad.
Make ahead: Assemble up to 24 hours in advance and bake when ready.
